Kuch Khaas Keto Food Challenge – Episode 5 – Michelle’s Chicken Haleem, Greek Lassi & Chocolate Mousse

In Episode 4, Michelle demonstrates how to live the good life when on a challenging diet. Living and eating large never tasted this satisfying.

 

Chicken Haleem 

Ingredients: 

350 gms boneless chicken
1 cup chicken stock
1 onion thinly sliced
2 Tbsp white lentil
2 Tbsp red lentil
2 Tbsp yellow lentil
1 cup oats
1 Tbsp ginger garlic paste
1 tsp black cumin
1 tsp Haldi
1 tsp red chilli powder
1 tsp garam masala
1 tsp coriander powder
Salt to taste
3 Tbsp Desi Ghee

Garnishing:
Sliced lemons
Fried onions
Chopped fresh coriander leaves
Green chillies
Cashew nuts

Instructions: 

  1. Heat ghee in a pan, Add the chicken, ginger garlic paste and the spices. Cook till chicken is tender. Cool and shred the chicken with your hands.
  2. Boil lentils and oats separately. When they are almost done remove from heat and drain. Now put the shredded chicken mixture back on the pan, add the stock, the lentils and the oats and cook the mixture till it blends together until you get the consistency you like.  30-40 minutes MINIMUM
  3. Garnish with lemon/lemon juice, fried onions, green chilies, coriander, and chopped cashews

 

Chocolate Mousse

Ingredients: 

200 gms chocolate
6 egg whites
1 cup double or whipping cream
Whipped cream for garnishing

Instructions: 

  1. Melt the chocolate in a heat resistant pan over boiling water.
  2. Beat the egg whites and the cream in separate bowls till it forms soft peaks and holds its shape.
  3. Let the chocolate cool down till it is still soft but not warm to the touch. Gently fold in the egg whites and then the whipped cream. Refrigerate.
  4. Serve with extra whipped cream and chocolate shavings.
